Lentil-Quinoa Salad with Fresh Ginger



Every once in awhile, you'll come across a recipe that is put out by a specific food brand that ends up being a keeper.  Not often, but this is one of those times.  Pompeian Olive Oil company had an ad somewhere (I can't remember where) that I tried for a very tasty salad.  No, I don't shill for them!  I served it at a large party, and there wasn't much left afterwards...a good sign.

Ok, don't laugh, I have a funny hangup with quinoa. And maybe I just didn't do something right. But my one and only time cooking it, it looked like little circles around the outside edge of the grain. Unfortunately for me, my mind immediately went to the suckers on an octupus tentacle! So, I don't have this grain in our foodie line up!

How can I help but laugh, Shirley? :-) It doesn't sound like you did anything wrong...the grain does make little circles. Substitute any other whole grain that you want! Bulghur, maybe?
