Egg salad with Greek yogurt
As I know I've mentioned more than once, I cannot eat mayonnaise. I've often substituted plain yogurt in dishes like Egg Salad, but it's never been particularly satisfying. Until Greek yogurt became so prevalent. I used Chobani plain yogurt, but it's up to you what brand you like best.
Egg Salad
Hard boiled eggs
Plain Greek yogurt
Coarse brown mustard
Capers
Salt and pepper
I served it over dark greens with slices of avocado and quartered artichoke hearts.

Simple chicken salad
First, I used my Fast and Easy Method for cooking a chicken breast. After the meat had cooled, it was a simple matter of layering thin slices of tomatoes and cukes with dark greens, chopped red pepper, crumbled goat cheese, and black olives, then topping with the shredded chicken and fresh thyme. I made a balsamic vinaigrette with a bit of maple syrup and more thyme, and served it all with lemon wedges.

Watermelon and feta cheese salad
I've shared this recipe for Watermelon Tabbouleh before, but it bears repeating before this summer's crop of watermelons is finished! Instead of making tabbouleh, I left out the grains and served the rest of the main ingredients over a plate of chopped butter lettuce.

Delicious tuna sandwiches with no mayo!
I can't eat mayonnaise at all, so I'm always on the lookout for sandwiches and salads that use my favorite ingredients, like tuna, without necessitating a trip to the hospital afterwards! Hannaford came up with a Lemon-Pistachio Tuna Sandwich that is moist and delicious without a drop of the dreaded stuff.

Salmon rub
This should be my last post about the food we enjoyed in Alaska. It really shouldn't be the last, because the food on the ship was amazing, but that just wasn't the focus of our trip. I know...shocking, isn't it? You can read more about our Alaskan adventures on Mixed Media Artist, which often serves as my travel blog.
I bought a package of dry rub for Salmon which really shouldn't be anything special, just kind of gimmicky, but that turned out to be really quite good. It is Sweet, Hot and Smokey Salmon Seasoning Rub from Alaska Botanicals Herbs and Teas in Homer, Alaska. Unfortunately, they do not seem to have a website, but the rub contains the following: sugar, salt, orange peel, juniper, onion, and chipotle peppers.

Cloudberry and crowberry jams
I have never heard of cloudberries or crowberries before our trip to Alaska. At the Anchorage Market and Festival, I met Alan Kurczynski, owner of Flavors of Alaska. Alan harvests most of the berries himself and makes all the jams, jellies, and toppings that he sells at the Market and through other select locations. He says that he finds it hard to keep up with the local and tourist demand, so he has no website at this time. I must say that this is purely tragic!
