Leek and Potato Soup is a wonderful once-a-month recipe to make in the fall or winter. Pull it out when you need it...it thaws and heats up quickly. If you use fewer of the green parts of the stalks than I did, you'll end up with a creamier colored soup. It's great either way!
I love soup and haven't had leek and potato in a while. Thanks for jogging my memory about an old favorite.
