Adobada, or adovada, means "marinated", and although it's often pork in Latin dishes, I found this version that uses chicken thighs in
Eating Well magazine. Absolutely delicious. I ended up eating the left over sauce on crackers the next day! Even though it calls for the chicken to be braised in the oven, I don't see any reason it couldn't be done in a crock pot if that would be more convenient for you.
