Edamame succotash



We hates lima beans in our house. They makes our head shake. We really hates 'em...they're tricksy and false!

But we like edamame. Here's a delicious succotash recipe, and I never thought I'd ever say that!

Edamame Succotash

1 red bell pepper, chopped
4 - 5 scallions, chopped
1 clove garlic, minced
1-1/2 c corn kernels
3/4 c shelled edamame
1 T rice wine vinegar
1 T lime juice
1 T olive oil
1 T fresh thyme, chopped
Salt and ground red pepper

Toss all together. Serve. That's it!
