Recently, I mixed up a small batch of Red-Cooked Chicken marinade to see how well it would do with grilled chicken. The verdict? Pretty darned good!
There it is on the plate, served with Green Beans and Mushrooms in Sherry sauce and some asiago cheese bread.

It's at the link. I used all the ingredients listed there except for the broth...actually I didn't use quite that much soy sauce either since it wasn't going to be simmering, just soaking:
2 c soy sauce (I used about 1 c)
1/4 c brown sugar
1 T peppercorns, slightly crushed
1/2 t anise seed
1/2 t fennel seed
2 t fresh ginger, minced
